I found a great recipe for Mini Pecan Coffee Cakes, baked in brioche pans. I ran all over town looking for them, but the few I did find were quite large (6 inches in size). I found this smaller size on Amazon and ordered them. I was disappointed in their performance. They are described as "nonstick," but my mini coffee cakes were quite stuck to the pans. I had to wait nearly 25 minutes before the cakes cooled off enough to pop out on their own. During that time I could have baked two more batches! Next time (?) I use these pans, I will spray them with some non-stick cooking spray and see if that works better. Yes, these are cute little brioche pans, but they didn't work as well as I had anticipated.
